I am already preparing for our huge Easter brunch celebration. Preparing for me means, that I try a lot of new recipes, I take out my Easter decoration and I clean up every corner in my apartment. It is the same procedure as every year. Easter celebration also means for me to let wintertime behind me and to prepare for a wonderful summertime. It is no secret anymore that we eat too much sugar and that it is very difficult to find food at the super market that is not full of sugar. Since years I cook every day fresh and I set a great value on healthy food for me and my family. I believe, that a happy life is about what we eat, what we do and what we think. Positive thoughts in combination with healthy food, a little bit of sports every week are the basics for a happy and harmonic life. And because of the big sugar problem our society has I thought, that it would be a great idea to prepare an Easter brunch where I try to avoid as much sugar as possible.
My blogger friend Thea regularly shows a lot of very helpful tips on her blog about how to avoid garbage, and how to cook delicious and healthy. She already inspired me many times to optimize my living and food habits. At this point I can already say that her very delicious vegan cake with lemons and coconut will be part of my Easter brunch.
For the red berries super food marmalade I take chia seeds instead of canning sugar. Well, the marmalade will not be durable as long as with canning sugar, but it can be kept in the fridge for around one week. Therefore, the marmalade has to be eaten after some days. On the other hand the marmalade with chia seed is much more healthy and not too sweet. To sweeten up the marmalade I take fresh vanilla pulp. The super food marmalade is made very quick and easy and it only takes around 15 minutes of preparation time.
The super food marmalade recipe
The red berries have to be sliced in small pieces and to be put into the cooking pot. Limes and ginger have to be rasped and put together with the lime juice and the vanilla pulp into the cooking pot too. All ingredients have to be cooked for around 5 minutes and afterwards they have to be squirted and mixed up with the chia seeds. At the end the warm marmalade has to be filled into the glasses and has to be cooled down in the fridge. Et voilà, everything is done.
